Tomato Beerakaya Pickle

Description:

    Tomata Beerakaya Pickle is an Andhra Special. Tomata Beerakaya Pickle is telugu word which is know as Tomato Ridge gourd pickle. This is an instant pickle which can be preserved for 1 -2 weeks. This curry can be served with hot steamed rice, in dosa and in Idly also.

Ingredients:

    Ridge gourd : ½ kg (Beerakaya)
    Tomato : ¼ Kg
    Green Chiles : 12
    Jeera : ½ spoon
    Garlic Cloves : 8
    Tamarind : Small lemon size
    Salt : As Required
    Turmeric : Little
    Oil : 3 table spoons
    Coriander Leaves : As required

Method of Preparation:

  1. Peel the Ridge gourd.
  2. Cut the Ridge gourd into small pieces and keep aside.
  3. Heat oil in tava, fry green chilies and keep aside.
  4. Fry Ridge gourd and tomato in the same tava in medium flame.
  5. Cover the tava with lid and wait till saute becomes soft.
  6. Remove the lid and add tamarind.
  7. Mix and fry for some time till becomes closer and keep aside.
  8. When above saute is cooled, Grind the fried green chilies, garlic, Jeera, Salt and Turmeric.
  9. Then add above sauté and grind once again.
  10. Garnish the Beerakaya tomato Pachadi with coriander leaves.
  11. Ready…to EAT.
